A grown up dessert. The taste of spring - fresh, fruity and flavorful.


1 small seedless watermelon, cut into 1" wedges

1/2 - 1 cup sugar ( I prefer it less sweet, so use less sugar)

3/4 c water

1/2 c tequila (I prefer Herradura)

1/4 c triple sec

2 limes cut into wedges

Coarse salt

Cotija cheese, crumbled (optional) 


1. Bring sugar, water, tequila and triple sec to a boil in a small saucepan. Cook, stirring until sugar dissolves, about 1 minute. Let cool.

2. Arrange watermelon slices in a baking dish or on a jelly roll pan. Pour simple syrup over fruit and refrigerate for 45 minutes or longer.

3. Remove fruit from soaking dish and arrange on platter. Squeeze lime over melon and sprinkle with sea salt.

4. Serve with additional lime wedges and salt. I also like to sprinkle Cotija cheese crumbles on mine.
